Four Points Lodge Bison Chili
Serves 6

1 small onion, diced
1-2 tablespoons vegetable oil
1 tablespoon garlic, chopped
1 pound ground bison
2 tablespoons chili powder
2 teaspoon ancho chili powder
1 tablespoon cumin
1 tablespoon ground oregano
1 1/2 teaspoons salt
7 ounces canned mild green chilies
1 14-ounce can diced tomatoes
1 15-ounce can black beans
1 15-ounce can pinto beans
1 15-ounce can kidney beans
Garnishes: jalapenos, shredded cheese, green onion and sour cream

• In a Dutch oven or heavy pot, add vegetable oil and onion. Sweat onions until translucent
• Add garlic and brown the bison. (If using grass-finished or extra-lean bison, add an additional tablespoon oil to pan while cooking.)
• Add remaining ingredients and 1 1/2 cups water. Simmer for 30 minutes to 1 hour.
• Garnish with jalapenos, shredded cheese, green onion and sour cream.
